I have a lot of cheddar cheese in my fridge.. can you give me a recipe to use up he cheddar?

preferable dessert. Is it possible to make cheescake wih cubes of cheddar and no cream cheese? i have no cream cheese but would love to make cheesecake with all these cheddar cheese. please share recipe/ recipe links
