What is a creative gift idea for my boyfriend?

I've already done a lot: collage, picture frame of us, a "retreat" letter (pertains to his past experience) and now I need another new idea. I plan on getting him a small stuffed animal and sewing on a colombian flag to the back. He is Colombian and very proud of it. I know he is philanthropy chair of his fraternity so I want to do something more sentimental rather than buying to go along with the stuffed animal. Any ideas? I've already written a letter of reasons why he is amazing and of all our past events together.
